Oat Pancake Recipe
I LOVE pancakes. Almost every variety. I don't like savoury and I'm not a bacon and maple syrup kind of girl but sweet pancakes with strawberries or nutella or banana or ice cream.. they're what dreams are made of 🤤
These days, I'm trying to change my eating habits and be more aware so I've switched to oat pancakes. They fit with the food I eat and balance out well. I often get compliments on how good they look and although I'd love to make out I'm the next Mary Berry they're actually just very simple and I am not the best baker.

I like to try a variety of toppings but the two go two favourites are caramelised cinnamon bananas or strawberries and Nutella.
Now I am really selling these so I had better show you what they are like! You may notice this picture has some slightly different branding - this is from the Instagram account I have with my best friend called The Hangry Birds which is our weight loss journey page.
Here are some I made recently with strawberries.
So to the important part - making them.
Ingredients 🛒
40g oats
2 medium eggs
50ml milk
1tbsp sweetener
1tsp vanilla (or any other flavour of your choice)
Method 🥣
- Place the oats in a blender and blitz until they resemble a fine powder
- In a bowl, separate the egg yolks keeping the whites for later
- Add the blitzed oats, sweetener, milk and vanilla essence to the yolks and stir until fully combined.
- In a separate bowl, whisk the egg whites until they form stiff peaks
- Add one tablespoon of the firm egg white mixture and fold in to the oat mixture to loosen
- Fold in the remaining egg white - the mixture should be light and fluffy.
- Spray a large non stick frying pan with oil and place on a low heat
- Once the oil is heated, spoon the mixture in to small rounds in the pan
- Leave to cook until bubbles form on the top of each pancake and then flip them with a spatula
- Leave to cook for a few minutes until golden brown on both sides
- Continue until you’ve used all of the mixture and voila - pancakes are complete.
- Add the toppings of your choice and enjoy 👩🏼🍳
The added tips of blending the oats and whisking the egg whites make all the difference to me - it makes them fluffier and a lot more filling which is great to assist in balancing my diet!
